Activate the Yeast: In a small bowl, combine warm milk, yeast, and sugar. Stir gently and let it sit for 5-10 minutes, or until it becomes frothy. This ensures that the yeast is activated and ready to make your buns rise.
Prepare the Dough: In a large mixing bowl, combine the melted butter, egg, and honey (if using). Add the yeast mixture and stir well. Gradually add the flour, salt, and milk powder (if using) and mix until a dough forms.
Knead the Dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes, or until the dough becomes smooth and elastic. If the dough feels too sticky, sprinkle a little more flour, but be careful not to add too much.
First Rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
Shape the Buns: Punch down the dough to release the air. Divide it into 8-10 even portions (depending on the size of buns you prefer). Roll each portion into a ball and place them on a greased or parchment-lined baking sheet, leaving a little space between each bun.
Second Rise: Cover the shaped buns with a towel and let them rise again for 30-45 minutes, or until they’ve puffed up and are touching each other.
Bake: Preheat your oven to 375°F (190°C). Brush the tops of the buns with a little melted butter and bake for 15-20 minutes, or until golden brown.
Cool and Serve: Remove the buns from the oven and let them cool on a wire rack. Brush them again with a little butter for extra shine and softness.
