Elegant Cranberry Brie Pastries

In a small bowl, mix the cranberry sauce, honey, and fresh thyme leaves until well combined. Set aside.
Step 2: Assemble the Pastries
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface and cut into 6 even strips.
Spread a thin layer of the cranberry glaze over each pastry strip.
Place brie slices along the upper edge of each strip, slightly overlapping.
Gently fold the pastry strip in half lengthwise over the brie.
Carefully roll each strip into a rose shape, sealing the end by pressing lightly.
Step 3: Bake the Pastries
In a small bowl, whisk together the egg and water to make an egg wash.
Brush the tops of the pastries with egg wash for a golden, shiny finish.
Place pastries on the prepared baking sheet and bake for 18-22 minutes or until golden brown and puffed.
Step 4: Garnish & Serve
Let the pastries cool slightly before garnishing with fresh thyme leaves.
Serve warm and enjoy the melty brie and cranberry goodness!
