Mix the Ingredients:
In a large bowl, combine the grated vegetables, flour, eggs, Cajun seasoning, and a pinch of salt and pepper. Mix until the ingredients are well combined. The mixture should hold together but not be too wet.
Form the Patties:
Take a tablespoon of the mixture and form it into small patties. You can make them as big or small as you prefer, but smaller patties are easier to handle.
Cook the Patties:
Heat olive oil in a large frying pan over medium heat. Once hot, add the veggie patties and cook for about 3-4 minutes on each side, until golden brown and crispy.
Serve:
Remove the patties from the pan and place them on a paper towel to absorb any excess oil. Serve hot with your favorite dipping sauce or as a side dish.
