Easy Spanish Omelette for One (or Two) | Tortilla de Patatas

Heat a small amount of oil in the same frying pan over medium-low heat.

Pour the egg, potato, and onion mixture back into the pan, spreading it out evenly. Let it cook undisturbed for 5-7 minutes, until the edges begin to set.

Once the edges are set, carefully flip the omelette by placing a plate over the pan, inverting it, and then sliding the omelette back into the pan to cook the other side for 3-4 minutes, or until fully set.

Serve:

Once cooked, slide the omelette onto a plate, slice it, and serve. It can be enjoyed warm or at room temperature.
