Easy Greek Chicken Souvlaki with Lemon Rice

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, salt, black pepper, smoked paprika, and red pepper flakes.
Add the chicken cubes, toss to coat, and marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
Step 2: Cook the Souvlaki
Grill Method:
• Preheat grill to medium-high heat. Thread chicken onto skewers and grill for 3-4 minutes per side, until golden and cooked through.

Skillet Method:
• Heat 1 tbsp olive oil in a skillet over medium-high heat.
• Cook chicken for 4-5 minutes per side, until charred and fully cooked.

Step 3: Make the Lemon Rice
In a saucepan, heat olive oil or butter over medium heat.
Add garlic and rice, sauté for 1-2 minutes until lightly toasted.
Pour in chicken broth, lemon juice, lemon zest, salt, and black pepper.
Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until rice is tender.
Remove from heat, fluff with a fork, and stir in fresh parsley.
Step 4: Assemble & Serve
• Serve chicken souvlaki over lemon rice with tzatziki, pita, and fresh veggies.
• Garnish with extra parsley and feta cheese, and enjoy!

Pro Tip
For extra charred, crispy edges, broil the cooked chicken for 2 minutes before serving!
