Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with muffin liners.
2. Prepare the Eggs:
In a large bowl, whisk the eggs, milk (or cream), salt, and pepper until well combined and frothy.
3. Add the Veggies & Sausage:
Stir in the chopped chicken sausage and your choice of mixed veggies. Make sure the vegetables are evenly distributed throughout the mixture.
4. Pour into Muffin Tin:
Divide the egg mixture evenly among the muffin tin cups, filling each about 3/4 of the way full.
5. Bake:
Bake the muffins in the preheated oven for 15-20 minutes, or until the eggs are set and lightly golden on top. A toothpick inserted in the center should come out clean.
6. Cool & Serve:
Allow the egg muffins to cool for a few minutes before removing them from the muffin tin. Serve warm or store in an airtight container for up to 3 days.
