Easy Egg Muffin | Vegetable Omelette Muffin Recipe

Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.

Prepare the Veggies:
In a small pan, sauté the finely chopped onion, green chili (if using), and carrot for 3-4 minutes until softened. Let it cool slightly.

Mix the Eggs:
In a bowl, whisk the eggs and add black pepper to taste. Add the sautéed veggies and chopped coriander leaves to the egg mixture and mix well.
