Place the chicken breasts at the bottom of the crockpot.
In a medium bowl, mix together the cream of chicken soup, chicken broth, garlic powder, onion powder, and black pepper. Pour this mixture over the chicken breasts.
In another bowl, prepare the stuffing mix according to the package directions, then layer the stuffing on top of the chicken mixture in the crockpot.
Cover and cook on low for 4-6 hours or until the chicken is fully cooked and tender.
If using, sprinkle the shredded cheddar cheese on top of the stuffing about 30 minutes before the cooking time is up, then cover and allow it to melt.
Garnish with fresh parsley, if desired, before serving.
