Easy Cabbage Soup: A Simple, Comforting Dish

Chop the cabbage, onion, garlic, carrots, and celery into bite-sized pieces.
2. Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened and fragrant.
3. Add the Vegetables
Add the chopped cabbage, carrots, and celery to the pot, and stir to combine with the onion and garlic. Cook for another 3-4 minutes.
4. Simmer the Soup
Add the diced tomatoes (with their juices), vegetable broth, dried thyme, and bay leaf to the pot. Stir everything together and bring the soup to a simmer.
Lower the heat and let the soup simmer for 20-25 minutes, or until the vegetables are tender and the flavors have melded together.
5. Season and Serve
Season the soup with salt, pepper, and lemon juice (if using) to taste.
Remove the bay leaf before serving, and ladle the soup into bowls.
