In a pan, melt 1 tbsp butter over medium heat. Add the chicken pieces and cook until lightly browned. Remove the chicken and set it aside.
Sauté Aromatics:
In the same pan, add the remaining butter. Sauté the chopped onion until soft and translucent, then add the garlic and ginger. Cook until fragrant.
Add Spices & Tomato Sauce:
Stir in garam masala, cumin, coriander, paprika, chili powder, and salt. Cook the spices for about 30 seconds, then pour in the tomato sauce. Let the sauce simmer for 5 minutes to develop the flavors.
Blend (Optional):
For a smoother sauce, you can blend the tomato mixture at this stage before continuing.
Simmer with Chicken & Cream:
Return the chicken to the pan and stir in the heavy cream. Add the sugar if you like a touch of sweetness to balance the acidity of the tomatoes. Simmer for another 5 minutes until the chicken is fully cooked through.
Serve:
Garnish with fresh cilantro and serve with warm rice or naan on the side.
