Easy Baked Italian Chicken and Veggie Foil Packets

Preheat the oven to 400°F (200°C).

Cut 4 large pieces of aluminum foil (each big enough to fold over the ingredients).

In a bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Stir until well mixed.

2. Assemble the Packets:
Divide the broccoli florets, chicken cubes, bell peppers, zucchini slices, and tomato chunks evenly among the foil pieces.

Drizzle the seasoned olive oil mixture evenly over the veggies and chicken in each packet.

Fold the foil over the ingredients and seal the edges tightly to form a packet.

3. Bake the Packets:
Place the foil packets on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender (internal temperature of chicken should be 165°F or 74°C).

If you want a slightly crispy top, carefully open the foil in the last 5 minutes of cooking.

4. Serve:
Remove from the oven and let the packets cool slightly before opening.

Garnish with fresh basil or parsley for an extra burst of flavor.

Serve the packets directly or over a bed of rice or pasta for a complete meal.
