Drizzle the seasoned olive oil mixture evenly over the veggies and chicken in each packet.
Fold the foil over the ingredients and seal the edges tightly to form a packet.
3. Bake the Packets:
Place the foil packets on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender (internal temperature of chicken should be 165°F or 74°C).
If you want a slightly crispy top, carefully open the foil in the last 5 minutes of cooking.
4. Serve:
Remove from the oven and let the packets cool slightly before opening.
Garnish with fresh basil or parsley for an extra burst of flavor.
Serve the packets directly or over a bed of rice or pasta for a complete meal.
