In a mixing bowl, combine the ground beef, salt, black pepper, and garlic powder. Gently mix the ingredients together, being careful not to overwork the meat.
Divide the mixture into 2 equal portions and shape them into burger patties slightly larger than your bun to account for shrinkage during cooking.
2. Cook the Bacon:
Heat a skillet over medium heat. Add the bacon strips and cook for about 4-5 minutes on each side, or until crispy. Remove the bacon from the pan and set aside on paper towels to drain any excess grease.
3. Sauté the Mushrooms:
In the same skillet, add 1 tbsp of butter. Once melted, add the sliced mushrooms and cook for about 5-6 minutes until softened and golden brown. Remove from the skillet and set aside.
4. Caramelize the Onions:
Add the sliced onions to the skillet and cook over medium-low heat for 10-15 minutes, stirring occasionally, until the onions become soft, sweet, and caramelized. Set aside.
5. Cook the Burger Patties:
In the same skillet or on a grill, cook the burger patties over medium-high heat for about 4-5 minutes per side or until your desired level of doneness is reached.
In the last minute of cooking, add a slice of cheddar cheese to each patty and cover the pan with a lid to melt the cheese.
6. Toast the Bun:
While the patties are cooking, heat a separate skillet and melt 1 tbsp of butter. Add the brioche bun halves, cut-side down, and toast for 1-2 minutes or until golden brown.
7. Assemble the Burger:
Place the bottom half of the toasted bun on a plate. Layer with one of the cheesy burger patties. Add a strip of crispy bacon, a few spoonfuls of caramelized onions, and sautéed mushrooms.
Top with the second cheesy burger patty, then place the top bun on top. Repeat for the second burger.
