Cut a small slice from the bottom of the potatoes to make them flat and stable.
Slice the Potatoes:
Place the potatoes, cut side down, between 2 chopsticks. Using a sharp knife, carefully cut the potatoes into 1/4-inch slices. The chopsticks will prevent you from cutting all the way through.
Prepare the Air Fryer:
Place the slice from the bottom of the potato in the air fryer basket, cut side down. Then, arrange the sliced potatoes on top of the bottom slice, ensuring the slices open up slightly.

Make the Garlic Butter:
Mix the melted butter, garlic paste (or minced garlic), kosher salt, and pepper together. Gently separate the slices of the potatoes and brush the garlic butter generously over the top and between the slices.
Season and Cook:
Sprinkle a little more kosher salt and pepper over each potato. Set the air fryer to 370°F (190°C) and cook for 20 minutes.
Add the Cheese:
Cut the cheese slices into fourths and place them between the potato slices, either in every slice or every other slice, depending on how cheesy you want it.
Finish Cooking:
Brush any remaining garlic butter over the potatoes and cook for an additional 20 to 25 minutes at 370°F, or until the potatoes are crispy and the cheese has melted.
Serve:
If desired, serve with sour cream and chives for extra flavor and garnish.
