Delicious Lemon Blueberry Yogurt Loaf

Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, whisk the eggs and sweetener until light and fluffy. Add yogurt, olive oil, lemon juice, lemon zest, and vanilla extract, mixing until smooth.
Gradually fold in the dry ingredients until just combined. Do not overmix.
Gently fold in the blueberries, ensuring they are evenly distributed.
Step 2: Bake the Loaf
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean.
Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Step 3: Make the Lemon Glaze (Optional)
In a small bowl, mix the powdered sweetener and lemon juice until smooth.
Drizzle the glaze over the cooled loaf before slicing.
