In a large bowl, whisk together the self-raising flour, sugar, and salt.
Add Wet Ingredients:
Stir in the buttermilk and canola oil until the dough comes together. The mixture should be thick but slightly sticky.
Shape the Donuts:
Turn the dough onto a lightly floured surface and roll it out to about 1/2-inch thick. Use a round cutter or the top of a glass to cut out donut shapes. You can also use a smaller cutter to make the center hole.
Heat Oil:
Heat about 2 inches of canola oil in a deep pan or pot over medium-high heat until it reaches around 350°F (175°C).
Fry the Donuts:
Carefully drop the donuts into the hot oil, frying a few at a time. Fry for 1–2 minutes on each side until golden brown and crispy.
Drain and Cool:
Use a slotted spoon to remove the donuts from the oil and place them on paper towels to drain excess oil.
Optional Toppings:
Once cooled slightly, you can dust them with powdered sugar, dip them in glaze, or top with sprinkles.
