In a small bowl, dissolve the yeast in lukewarm milk and add 1 tsp sugar. Let it sit for about 5-10 minutes until the mixture becomes frothy.
In a large bowl, combine the flour, sugar, vanilla sugar, and salt. Add the eggs, dissolved yeast mixture, and soft butter. Knead everything into a smooth, elastic dough (about 10 minutes).
Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Shape the Donuts:
Roll out the risen dough on a floured surface (about 1.5 cm thick). Use a round cookie cutter to cut out donut shapes and place them on a baking sheet lined with parchment paper.
Use a smaller cutter to make a hole in the center of each donut to create the traditional donut shape.
Cover the donuts and let them rise again for 20-30 minutes.
Fry the Donuts:
Heat oil in a deep pot or fryer to about 170°C (340°F). Carefully place the donuts into the hot oil and fry them until golden brown on both sides (about 2-3 minutes per side).
Use a slotted spoon to remove the donuts and let them drain on paper towels.
