Delicious Filipino Pork Adobo

In a large bowl, combine the soy sauce, Sprite, and pork belly cubes. Mix well, ensuring all the pork is coated. Cover the bowl and refrigerate for at least 6 hours, allowing the flavors to infuse.

2️⃣ Drain the Marinade:
Using a kitchen sieve, drain the marinade from the pork belly and set it aside.

3️⃣ Sauté the Aromatics:
Heat 3 tablespoons of cooking oil in a pot over medium heat. Once the oil is hot, sauté the crushed garlic until it becomes light brown.

Add the minced onion and continue to sauté until it softens and becomes translucent.

4️⃣ Brown the Pork Belly:
Add the marinated pork belly to the pot. Stir occasionally and cook until the pork turns light brown, allowing it to sear slightly.

5️⃣ Add the Marinade and Simmer:
Pour the reserved marinade (soy sauce and Sprite) into the pot with the pork. Stir to combine, then cover and bring to a boil.

6️⃣ Season with Spices:
Add the whole peppercorns and dried bay leaves. Cover the pot and let it simmer over medium heat for about 30 minutes.

7️⃣ Add Vinegar and Continue to Cook:
Pour the vinegar into the pot and allow the liquid to re-boil. Stir to combine and cover the pot. Let it cook for an additional 25 to 30 minutes, until the pork is tender and the flavors have melded.
