Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until softened.
Add the carrot, yellow pepper, green pepper, and red pepper. Continue to sauté for another 5 minutes until the vegetables begin to soften.
2. Add Potatoes and Water
Stir in the chopped potatoes, then pour in 1.2L of water (or vegetable broth). If you’re adding garlic or tomato paste, mix them in now along with the herbs for extra flavor.
Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 20-25 minutes or until the potatoes are tender and the vegetables are well-cooked.
3. Season and Serve
Once the vegetables are cooked, add salt to taste. You can also adjust the seasoning by adding extra herbs or a dash of pepper.
Serve hot with a slice of crusty bread or a sprinkle of grated cheese if desired.
