Sear the Beef (Optional but Recommended):
Heat vegetable oil in a skillet over medium-high heat.
Add the sliced beef and sear it for about 2-3 minutes until browned. This step adds extra flavor to the dish.
Combine Ingredients in Crock Pot:
Transfer the seared beef strips to the Crock Pot.
Add the sliced bell peppers, onions, and minced garlic to the pot.
Prepare the Sauce:
In a small bowl, whisk together soy sauce, Worcestershire sauce, rice vinegar, brown sugar, black pepper, and ground ginger. Pour this sauce over the beef and vegetables in the Crock Pot.
Cook the Dish:
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the vegetables are cooked.
Thicken the Sauce:
About 30 minutes before serving, mix cornstarch with 1/4 cup of water in a small bowl to create a slurry. Stir this into the Crock Pot to thicken the sauce.
Serve:
Once the sauce has thickened and the beef is tender, serve your delicious pepper steak over steamed rice.
