Decadent Neapolitan Ice Cream Cake Roll: A Delicious Layered Frozen Treat

Preheat your oven to 350°F (175°C).
Grease and line a 10×15-inch jelly roll pan with parchment paper.
In a medium bowl, whisk together the eggs and granulated sugar until pale and fluffy, about 3-4 minutes. Stir in the vanilla extract.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture, mixing until just combined.
Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes, or until the cake is lightly golden and a toothpick comes out clean.
Roll the Cake:

Once the cake is baked, remove it from the oven and let it cool slightly for about 5 minutes.
Place a clean kitchen towel on a flat surface and dust it lightly with powdered sugar. Flip the cake onto the towel, then peel off the parchment paper.
Starting from one short edge, gently roll the cake up with the towel. Let the cake cool completely while rolled.
Prepare the Ice Cream Filling:

While the cake is cooling, soften the ice cream flavors by letting them sit at room temperature for about 5-10 minutes.
Gently fold the softened vanilla, chocolate, and strawberry ice creams into separate bowls. You can either layer them as they are or gently swirl them together for a marbled effect.
Assemble the Cake Roll:

Unroll the cooled cake carefully, then spread the ice cream mixture evenly over the entire surface, leaving a small border along the edges.
Roll the cake back up, without the towel this time, creating a swirl of ice cream inside the cake.
Freeze and Serve:

Place the cake roll on a serving platter and wrap it tightly in plastic wrap. Freeze for at least 4 hours, or until the ice cream is firm and the cake is set.
Make the Whipped Cream Topping (optional):

If desired, whip the heavy cream and powdered sugar together until soft peaks form. Spread or pipe the whipped cream on top of the chilled cake roll just before serving.
Drizzle with chocolate syrup or melted chocolate for extra decadence.
Serve:

Slice the cake roll carefully, serve immediately, and enjoy the layered flavors of chocolate, vanilla, and strawberry in every bite!
