Crockpot Pepper Steak: Tender, Flavorful Comfort in a Pot

Slice the beef into thin strips against the grain.
Slice the onions and bell peppers into thin strips as well.
Mince the garlic.
2. Assemble in the Crockpot:

In the bottom of the crockpot, add the beef, onions, bell peppers, and garlic.
In a small bowl, whisk together the soy sauce, beef broth, oyster sauce (if using), brown sugar, cornstarch, and crushed red pepper flakes (if using).
Pour the sauce mixture over the beef and vegetables in the crockpot. Stir to coat everything evenly.
3. Slow Cook:

Cover and cook on low for 6-7 hours, or until the beef is tender and the vegetables are soft. Alternatively, you can cook on high for 3-4 hours if you’re in a hurry.
About 30 minutes before serving, check the sauce. If it’s too thin, mix a tablespoon of cornstarch with a tablespoon of water and stir it into the crockpot to thicken the sauce.
4. Serve:

Once the pepper steak is done, give it a final stir.
Serve the pepper steak over cooked rice or noodles and garnish with fresh herbs or additional crushed red pepper flakes if desired.
