Crockpot Ham, Green Beans, and Potatoes

Ham: Cube or cut the ham into large chunks, ensuring they’re evenly sized to cook consistently.
Potatoes: Peel and dice the potatoes into bite-sized pieces.
Green Beans: Trim and cut the green beans into 2-inch pieces (if using fresh).
Onion and Garlic: Chop the onion and mince the garlic.
2. Sauté (Optional):
Heat 1 tablespoon olive oil in a skillet over medium heat and sauté the onion and garlic for 2-3 minutes until fragrant and translucent. This step adds extra flavor but is optional.
3. Load the Crockpot:
Add the ham, potatoes, green beans, and sautéed onion and garlic (if using) into the Crockpot.
Pour in the chicken broth, then season with smoked paprika, dried thyme, salt, and pepper to taste. Mix well to combine.
4. Cook:
Cover the Crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender, the ham is heated through, and the flavors have melded together.
5. Serve:
Once the dish is cooked, taste and adjust seasoning as needed. Serve hot and enjoy!
