Lightly grease the inside of your crockpot.
Place half of the caramelized onions at the bottom of the crockpot.
Shape the meatloaf mixture into a loaf and place it on top of the onions.
Top the meatloaf with the remaining caramelized onions.
Cook:
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Add the Cheese:
About 15 minutes before serving, sprinkle the Swiss Gruyère or provolone cheese on top of the meatloaf.
Cover and let the cheese melt.
Serve:
Once cooked, carefully remove the meatloaf from the crockpot.
Slice and serve garnished with fresh thyme sprigs.
