Grate the zucchini, carrot, and potato, then place them in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
Place the grated vegetables in a large mixing bowl.
Combine the Ingredients:
Add the eggs, grated cheese, minced garlic, and your choice of spices (paprika, pepper, or any other seasonings you like).
Stir in the oat flakes and flour. The mixture should hold together well but still be a bit moist. Add a pinch of salt to taste.
Shape the Fritters:
Heat olive oil in a frying pan over medium heat.
Take a spoonful of the mixture and shape it into a patty, pressing it lightly. Place it in the hot oil.
