Crispy Tuna Cakes

Drain the tuna and break it apart using a fork in a large bowl.
Stir in the eggs, parmesan cheese, mayonnaise, Dijon mustard, fresh parsley, lemon zest, garlic powder, sea salt, and black pepper. Mix gently to combine all ingredients.
Form the Patties:

Shape the mixture into 8 equal patties, about 1/2-inch thick.
Cook the Patties:

Heat olive oil in a skillet over medium heat.
Fry the patties for about 3-4 minutes per side, until they are golden brown and crispy.

Transfer the cooked patties to a plate and serve hot with lemon wedges or a dipping sauce of your choice.
