Crispy Stuffed Sardines with Parmesan and Garlic

Prepare the sardines: Start by gutting and filleting the sardines, ensuring they are clean and boneless. If necessary, pat the fillets dry with paper towels.

Make the stuffing: In a mixing bowl, combine the breadcrumbs, grated parmesan, chopped parsley, garlic, and a pinch of salt and pepper. Mix well until the ingredients are evenly incorporated.

Stuff the sardines: Lay one sardine fillet flat and place a spoonful of the breadcrumb mixture on top. Top with another fillet to form a sandwich. Press gently to hold the filling in place. Repeat with the remaining sardines and stuffing.

Coat the sardines: In a shallow dish, place some extra breadcrumbs. Dip the stuffed sardines into the breadcrumbs, pressing gently to coat each fillet evenly.

Fry the sardines: Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the stuffed sardines to the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy.

Drain and serve: Remove the sardines from the oil and place them on a paper towel to drain excess oil. Serve hot and enjoy!
