Wash and peel (optional) the potatoes. Slice them evenly into thin rounds, about 1/8-inch thick.
In a bowl, toss the sliced potatoes with olive oil, salt, pepper, and any additional seasonings you’d like to add.
Preheat the air fryer to 375°F (190°C).
Place the potato slices in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
Air fry for 15-18 minutes, shaking the basket halfway through to ensure even cooking. The potatoes should be golden and crispy when done.
Once cooked, remove from the air fryer and serve immediately!
