Crispy Puff Pastry with Creamy Cheese, Bacon, and Salami

In a skillet, heat the oil over medium heat. Add the chopped onion, garlic, and grated sugar beet. Sauté for about 3-4 minutes until softened.

Add the diced bacon and cook until crispy. Then add the chopped spring onions, salami, and basil, and cook for another 2 minutes.

Remove the skillet from the heat and let it cool slightly. Stir in the cream cheese, melted cheese, and a pinch of salt. Mix until everything is well combined.

Prepare the Puff Pastry:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll out the puff pastry on a lightly floured surface. Cut into squares or rectangles, depending on your preferred size for the pastries.

Assemble the Pastries:

Place a spoonful of the filling in the center of each puff pastry square. Fold the edges over to seal the filling inside, forming a pocket or triangle shape.

Beat the egg yolk and brush it over the top of each pastry for a golden, crispy finish.

Bake the Pastries:

Place the assembled pastries on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and crispy.

Serve:

Let the pastries cool slightly before serving. These are best enjoyed warm, straight from the oven, but they also taste great at room temperature!
