Wash and slice the zucchinis into thin rounds.
Set up Breading Station:
In separate bowls:
Beat the eggs.
Place flour in a second bowl.
In a third bowl, mix the breadcrumbs and grated Parmesan.
Bread the Zucchini:
Dip each zucchini slice into flour, then egg, then breadcrumb-Parmesan mixture.
Fry:
Heat vegetable oil in a pan over medium heat. Fry the zucchini until golden brown on both sides, about 2–3 minutes per side.
Serve:
Drain the fritters on paper towels and serve warm.
