Crispy Parmesan and Herb Potato Bites with Italian Herb Bread Snacks

Place the potato chunks in a large pot of salted water and bring to a boil. Cook the potatoes for 10-12 minutes or until they are fork-tender.

Drain the potatoes and let them cool slightly.

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Toss the cooled potato chunks with olive oil, paprika, Parmesan cheese, oregano, thyme, garlic powder, and black pepper. Mix until well-coated.

Spread the potatoes evenly on the baking sheet and bake for 25-30 minutes, flipping halfway through, until they are crispy and golden.

2️⃣ Make the Italian Herb Bread Snacks:
Preheat your oven to 375°F (190°C).

Brush each slice of Italian bread with olive oil on both sides. Sprinkle with Italian seasoning, garlic powder, and a pinch of salt.

Place the bread slices on a baking sheet and bake for 10-12 minutes, or until they are golden brown and crispy.

3️⃣ Serve:
Once the potato bites are crispy and golden, remove them from the oven.
