Cut the potatoes into thin fries. Soak them in cold water for 30 minutes to remove excess starch.
Pat the fries dry with a towel, then deep-fry them in hot oil (350°F/175°C) until golden and crispy. Remove from the oil and drain on paper towels. Season with salt and pepper.
Make the Onion Rings Batter:
In a bowl, mix the flour, baking powder, and salt.
Whisk in the cold sparkling water (or milk) and egg until the batter is smooth and well combined.
Coat & Fry the Onion Rings:
Dip each onion ring into the batter, ensuring it’s fully coated. Then coat the battered onion ring with breadcrumbs or panko.
Fry the onion rings in hot oil (375°F/190°C) until golden brown and crispy. Remove from the oil and drain on paper towels.
Drain & Serve:
Serve the crispy fries and onion rings hot with your favorite dipping sauces, such as ketchup, mayo, or any other preferred dip.
