Crispy Octopus Fritters with Zesty Dipping Sauce

Bring a pot of water to a boil and add the bay leaf and salt.
Submerge the octopus and cook for 30–40 minutes, until tender.
Drain and let it cool before cutting it into bite-sized pieces.
Step 2: Prepare the Breading
In a bowl, whisk together the eggs and milk.
In a separate plate, combine the flour, salt, and smoked paprika.
Pour the panko breadcrumbs onto another plate.
Step 3: Bread and Fry the Octopus
Dip each octopus piece into the flour mixture, then the egg-milk mixture, and finally coat it with panko breadcrumbs.
Heat frying oil to 180°C (350°F) in a deep pan.
Fry the breaded octopus pieces for 2–3 minutes until golden brown and crispy.
Drain on a paper towel to remove excess oil.
Step 4: Make the Dipping Sauce
In a small bowl, mix mayonnaise, lemon juice, minced garlic, and chili powder.
Step 5: Serve and Enjoy
Arrange the crispy octopus fritters on a plate.
Sprinkle with a pinch of salt and serve with lemon wedges.
Serve immediately with the dipping sauce on the side.
