Crispy Lemon Chicken

Pat the chicken thighs dry with paper towels. This helps the breading to stick and ensures the chicken crisps up nicely.
Step 2: Set Up the Breading Station
In a shallow dish, combine flour, salt, black pepper, garlic powder, and paprika.
In another shallow dish, beat the eggs.
In a third shallow dish, place the breadcrumbs.
Step 3: Bread the Chicken
Dredge each chicken thigh in the flour mixture, shaking off any excess.
Dip the chicken into the beaten eggs, letting any excess egg drip off.
Coat the chicken in the breadcrumbs, pressing gently to ensure they stick.
Step 4: Fry the Chicken
In a large skillet, heat the olive oil over medium heat.
Once hot, carefully add the breaded chicken thighs to the skillet.
Cook for about 5-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (74°C).
Remove the chicken from the skillet and place it on a paper towel-lined plate to drain any excess oil.
Step 5: Make the Lemon Sauce
In a small bowl, whisk together the lemon juice, honey, and lemon zest.
Drizzle the sauce over the crispy chicken just before serving.
Step 6: Serve
Garnish with chopped parsley and serve with lemon wedges on the side.
