Crispy Garden Bites: Easy Vegetable Croquettes

In a large bowl, combine the mashed potatoes, grated carrot, peas, corn, onion, garlic, herbs, cumin, pepper, and salt.

Mix well, then add breadcrumbs and mix again to form a firm dough-like mixture.

Shape the Croquettes:

Take small portions of the mixture and shape into cylinders or round patties.

Optional: Chill in the fridge for 15–20 minutes to firm them up before frying.

Coat the Croquettes:

Roll each croquette in flour. If using egg, dip into beaten egg, then coat with breadcrumbs for extra crispiness.

Repeat with all croquettes.

Fry Until Golden:

Heat oil in a deep skillet or frying pan over medium heat.

Fry croquettes in batches until golden brown and crisp, about 2–3 minutes per side.

Remove and drain on paper towels.
