Crispy Fries with a Vinegar Twist


Peel the potatoes (if desired) and cut them into thin strips (about 1/4 inch thick).

Place the cut fries into a large bowl of water and soak for 30 minutes to remove excess starch.

Step 2: Vinegar Soak
In a separate bowl, mix 2 tablespoons of white vinegar with about 2 cups of water.

After the initial soak, drain and place the fries into this vinegar solution for another 10 minutes.

Step 3: Coat with Cornstarch
Drain the vinegar water and pat the fries dry using a towel or paper towels.

Place the fries in a large bowl and sprinkle 1 heaping tablespoon of cornstarch over them. Toss to coat evenly.

Step 4: Fry the Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

Fry the fries in batches for about 3-4 minutes, just until they are softened but not yet browned. Remove them and let them rest on a paper towel-lined plate.

Step 5: Crisp Them Up
Increase the oil temperature to 375°F (190°C).

Return the fries to the hot oil and fry for 2-3 minutes or until golden and crispy.

Step 6: Drain and Serve
Remove the fries from the oil and place them on paper towels to drain excess oil.

Season with salt (or other seasonings of your choice) and serve immediately.
