In another bowl, whisk together the milk, egg, and a pinch of salt and pepper until smooth. Set this aside for dipping.
Step 3: Coat the Chicken
Take each chicken thigh and dip it first into the dry flour mixture, coating it evenly. Then, dip it into the wet egg and milk mixture, ensuring it’s fully covered. Finally, dip it back into the dry mixture, pressing gently to ensure the coating sticks well. This double-dip method creates a crispy, crunchy crust.
Step 4: Fry the Chicken
Heat the oil in a deep fryer or large pot to about 180°C (350°F). Once the oil is hot, carefully place the coated chicken pieces into the oil, making sure not to overcrowd the pan.
Fry the chicken for about 10-12 minutes, turning occasionally to ensure all sides are golden brown and crispy. The internal temperature of the chicken should reach 75°C (165°F) to ensure it’s fully cooked.
