Preheat your oven to 375°F (190°C).
Lay out a clean kitchen towel and place a sheet of parchment paper on top to keep your phyllo dough from drying out. Place 1 sheet of phyllo dough on a flat surface and lightly brush with olive oil. Top it with another sheet of phyllo dough and brush it again with olive oil. Repeat this process with the remaining sheets to create a stack of 4 layers of dough.
Step 2: Prepare the Filling
In a small bowl, mix together the crumbled feta cheese, honey, oregano (if using), and a pinch of salt and pepper. Stir until the mixture is well combined.
Step 3: Form the Rolls
Once your phyllo dough is stacked and oiled, cut the dough into 3 equal strips lengthwise.
Place about a tablespoon of the feta and honey mixture at one end of each strip.
Carefully fold the sides of the phyllo dough inward over the filling, then roll the dough tightly into a small cylinder or log, sealing the edges as you go.
Step 4: Bake the Rolls
Place the rolls seam-side down on a baking sheet lined with parchment paper. Brush the tops of the rolls with a little more olive oil.
Sprinkle the tops with sesame seeds, if desired, for extra crunch and a bit of added flavor.
Bake in the preheated oven for 15-20 minutes or until the phyllo rolls are golden brown and crispy.
Step 5: Drizzle with Honey and Serve
Once the rolls are done, remove them from the oven and let them cool for a few minutes.
Drizzle with extra honey just before serving for a touch of sweetness.
