Crispy Chicken and Potato Bake

In a large bowl, combine the grated potatoes, eggs, red bell peppers, onion, cheese, salt, black pepper, and paprika. Mix well until evenly combined.

Season the Chicken:

In a separate bowl, season the sliced chicken breasts with garlic powder, onion powder, paprika, salt, and black pepper. Drizzle with olive oil and toss to coat.

Cook the Potato Mixture:

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Spread the potato mixture evenly in the skillet and cook for about 5-7 minutes until the bottom turns golden brown.

Add the Chicken:

Place the seasoned chicken slices on top of the potato mixture. Cover with a lid and cook for another 10-12 minutes over medium-low heat until the chicken is cooked through.

Flip & Finish Cooking:

Carefully flip the entire mixture using a large plate or two spatulas. Cook for another 5-7 minutes, until golden and crispy on both sides.

Serve & Enjoy:

Transfer to a serving plate, slice into portions, and serve hot. Enjoy with a side of sour cream or a fresh salad!
