Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
Step 2: Prepare the Cauliflower
Wash and cut the cauliflower into bite-sized florets.
In a large bowl, combine the flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper.
Step 3: Make the Batter
Add the water (or milk) to the dry ingredients and whisk until you have a smooth batter. It should be thick enough to coat the cauliflower, but not too heavy.
Step 4: Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it’s fully coated. Shake off any excess batter before placing the florets on the prepared baking sheet.
Step 5: Bake the Cauliflower
Drizzle the cauliflower florets with olive oil and bake for 20-25 minutes, or until the cauliflower is golden and crispy, flipping halfway through for even cooking.
Step 6: Prepare the Buffalo Sauce
While the cauliflower is baking, combine the buffalo sauce, melted butter, and honey in a small bowl. Stir until well mixed.
Step 7: Coat the Baked Cauliflower in Buffalo Sauce
Once the cauliflower is crispy and cooked, remove it from the oven and drizzle the buffalo sauce over the florets, tossing them gently to coat evenly.
Step 8: Serve
Serve immediately while hot, with a side of ranch or blue cheese dressing for dipping.
