Steam the broccoli florets in a steamer basket over boiling water for about 5-7 minutes, or until tender. Drain and let them cool for a few minutes. Once cooled, chop the broccoli into small pieces.
Mix the Ingredients:
In a large bowl, combine the chopped broccoli, shredded cheddar cheese, eggs, flour, breadcrumbs, minced garlic, green onions, salt, and pepper. Stir everything together until well combined.
Form the Patties:
Using your hands or a spoon, scoop a portion of the mixture and form it into a small patty. Repeat until all of the mixture is used up.
Cook the Patties:
Heat a tablespoon of olive oil in a skillet over medium heat. Once the oil is hot, add the patties to the pan in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
Serve:
Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil. Serve warm as a side dish or snack. You can also serve them with a dipping sauce like ranch or sour cream.
