Prepare the Pastry: Lay a sheet of filo pastry flat on a clean surface. Brush it lightly with melted butter or olive oil. Place another sheet of filo pastry on top and brush again.
Add the Cheese Filling: Cut the pastry into strips (approximately 2-3 inches wide). Place a generous amount of cheese at the edge of each strip.
Shape the Triangles: Fold the corner of the pastry over the cheese to form a triangle. Continue folding the triangle over itself until you reach the end of the strip. Make sure the triangle is sealed well.
Egg Wash and Season: Beat the egg and brush it over the top of each triangle. Sprinkle with salt, pepper, and any desired herbs for added flavor.
Bake: Preheat your oven to 375°F (190°C). Place the triangles on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown and crispy.
Serve: Let the cheese triangles cool slightly before serving. They can be enjoyed on their own or with a dipping sauce like marinara or ranch.
