In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. In the last 2-3 minutes of cooking, add the broccoli florets to the pot. Drain and set aside, reserving a bit of pasta water.
Cook the Chicken:
While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove from the skillet and set aside.
Make the Creamy Sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute, until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer, then reduce the heat and let it cook for 3-4 minutes until the sauce thickens slightly.
Combine:
Add the cooked chicken and pasta to the skillet with the sauce. Toss to coat the pasta evenly in the creamy sauce. Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper to taste.
Serve:
Once everything is well mixed and heated through, sprinkle with fresh parsley, if desired. Serve the creamy penne with broccoli and chicken hot and enjoy!
