Creamy Parmesan Italian Sausage Soup

In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into small pieces with a spoon. Remove any excess fat if necessary.

Add the Aromatics:
Add the chopped onion and minced garlic to the pot. Cook until the onion becomes translucent, about 3-4 minutes.

Simmer the Broth:
Pour in the chicken broth and diced tomatoes, stirring to combine. Bring the mixture to a simmer.

Add the Cream and Cheese:
Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Let the soup simmer for about 10 minutes, stirring occasionally to help the flavors meld.

Add the Spinach:
Stir in the baby spinach and cook until wilted, about 2 minutes.

Season and Serve:
Season with salt and pepper to taste. Serve hot with crusty bread or garlic bread for the perfect meal!
