Creamy Mexican-Style Pasta Salad

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.
Drain the pasta and rinse it under cold water to stop the cooking process. Set aside.
Step 2: Prepare the Dressing
In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, smoked paprika, salt, and black pepper.
Step 3: Assemble the Salad
Add the cooked pasta, corn, cotija cheese, cilantro, red onion, and jalapeño (if using) to the bowl with the dressing.
Toss everything together until well coated.
Step 4: Chill and Serve
Cover and refrigerate for at least 20 minutes to allow the flavors to meld.
Before serving, garnish with extra cheese and cilantro.
