Creamy Lemon Mousse in 5 Minutes! A Refreshing Delight Without Eggs

In a saucepan, combine the lemon juice, water, and sugar. Stir until the sugar is dissolved and the mixture is well combined.
In a separate bowl, mix the cornstarch with a small amount of water to create a slurry. Slowly whisk this slurry into the lemon mixture in the saucepan.
Heat over medium heat, constantly stirring, until the mixture thickens to a pudding-like consistency.
Once thickened, remove the saucepan from the heat and stir in the turmeric for a beautiful golden color.

2️⃣ Chill the Lemon Curd:
Allow the lemon curd to cool down to room temperature, then place it in the fridge to chill for at least 30 minutes. This will help the mousse set properly.

3️⃣ Assemble the Mousse:
Once the lemon curd has cooled and thickened, gently fold it into whipped cream or whipped coconut cream for an extra creamy texture. You can also add a little vanilla extract to enhance the flavor.
Whisk everything together until smooth and creamy.

4️⃣ Serve and Enjoy:
Scoop the lemon mousse into serving cups, garnish with lemon zest or fresh mint leaves, and enjoy your refreshing treat!
