Slice the chicken breast into strips or cubes.
Chop the onions, red capsicum, and spring onions.
Clean and pat dry the prawns and scallops.
Chop the bacon into small pieces.
Cook the Bacon:
Heat a large pan over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the pan and set aside.
Cook the Chicken:
In the same pan, add a tablespoon of olive oil. Season the chicken with salt and pepper, then add it to the pan. Cook for about 6-8 minutes or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside with the bacon.
Sauté the Vegetables:
In the same pan, add the onions, red capsicum, and spring onions. Cook for 3-4 minutes until the vegetables are softened.
Add the minced garlic and cook for an additional 30 seconds until fragrant.
