Gradually whisk in the Parmesan and mozzarella cheese until melted and smooth. Add the reserved pasta water if the sauce needs thinning.
Combine Everything:
Return the cooked chicken to the skillet, stirring to coat it in the sauce. Toss in the cooked pasta until evenly coated. If desired, add spinach or cherry tomatoes for a burst of color and freshness.
Serve:
Transfer to serving bowls, garnish with fresh parsley, and enjoy immediately!
