Prepare the Chicken: If using chicken breasts, cook them in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Once cooked, dice the chicken into bite-sized pieces. Alternatively, use cooked rotisserie chicken for convenience.
Make the Sauce: In a saucepan over medium heat, combine the white sauce (béchamel or Alfredo) and cream cheese. Stir until the cream cheese is fully melted and the sauce is smooth. Season with garlic powder, Italian seasoning, salt, and pepper to taste. Let the sauce simmer gently for 3-4 minutes.
Combine the Pasta and Chicken: In a large mixing bowl, combine the cooked pasta and diced chicken. Pour the creamy sauce over the pasta and chicken, and stir to coat everything evenly.
Assemble the Bake: Preheat your oven to 375°F (190°C). Transfer the pasta and sauce mixture into a greased 9×13-inch baking dish. Top with shredded mozzarella cheese and grated Parmesan cheese.
Bake: Place the dish in the oven and bake for 20-25 minutes, or until the top is golden and bubbly.
Serve: Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh chopped parsley for a pop of color.
