Toss the shrimp with salt, pepper, Cajun seasoning, and oregano until evenly coated.
Heat a large skillet over medium-high heat. Drizzle olive oil into the pan and cook the shrimp for 2 minutes on one side, then flip and cook for another 1–2 minutes until pink and cooked through. Remove shrimp from the skillet and set aside.
Cook Sausage:
Drizzle more olive oil into the skillet and add the sliced sausage. Cook until browned and caramelized, about 4–5 minutes. Remove sausage from the skillet and set aside.
Cook Pasta:
Bring a pot of salted water to a boil and cook the fettuccine pasta until al dente. Drain and set aside.
Sauté Vegetables:
Lower the skillet heat to medium. Add more olive oil if needed, then sauté the onion, red bell pepper, Cajun seasoning, brown sugar, and a pinch of salt. Cook until the onion and peppers soften, scraping up any browned bits from the pan.
Add garlic and sauté for about 30 seconds until fragrant.
Make the Sauce:
Stir in the crushed tomatoes, chicken broth, and heavy cream. Simmer while stirring, scraping up the browned bits from the pan for maximum flavor.
Once the sauce is simmering, add the Parmesan cheese and stir until fully melted and incorporated.
Combine:
Add the cooked pasta and sausage to the sauce. Stir to combine and heat through, about 2–3 minutes. Taste and adjust salt and pepper as needed.
Finish with Shrimp:
Return the cooked shrimp to the pan and gently stir to combine.
Serve:
Garnish with chopped parsley and serve hot.
