Season the chicken strips with Cajun seasoning.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 5-6 minutes, until browned and fully cooked.
Remove the chicken from the skillet and set aside.
2. Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook the pasta according to the package directions until al dente.
Reserve ½ cup of pasta water, then drain and set aside.
3. Sauté the Veggies:
In the same skillet, melt butter over medium heat.
Add garlic, bell peppers, and onions, and sauté for 3-4 minutes until softened.
4. Make the Sauce:
Stir in heavy cream, chicken broth, and Parmesan cheese.
Bring to a gentle simmer, stirring for 3-4 minutes until the sauce slightly thickens.
5. Combine Everything:
Add the cooked chicken, pasta, and diced tomatoes to the skillet.
Toss everything together until well coated in the creamy sauce.
If the sauce is too thick, gradually add reserved pasta water to loosen it up.
6. Serve:
Garnish with fresh parsley and extra Parmesan cheese, if desired.
Serve hot and enjoy!
